Among the most popular flavors, in addition to the classics of Italian heritage, the return of Zabaglione -nicknamed the "cream of creams" due to its simple recipe of sugar, eggs, and fortified wine - stands out. Matteo Grizi, a renowned ice cream maker from Albano, a suburb of Rome, came up with a new variation. Golden in color and with a rich texture, this unique recipe has been named "Zabaglione Capitolium" for its distinctive characteristics. According to statistics from the Italian Association of Gelato Makers and FIEPET-CONFESERCENTI of Rome and Lazio, artisan gelato is verified as one of Italy's finest products, with rises of over 30 percent in the central-southern areas, 28 percent in the cities of art, with Rome's share climbing to 32 percent, and 24 percent in the central-northern regions.
