The charm of pizza also beats inflation. Prices are rising by 7%, almost half the average of food products, to the delight of enthusiasts. This is what emerges from an analysis by Coldiretti on the occasion of the fifth anniversary of the inscription of"Arte dei Pizzaiuoli Napoletani" (Art of the Neapolitan Pizza-makers) the list of the intangible cultural heritage of humanity of UNESCO that took place on December 7, 2017. Despite the bad year in the production of the main ingredients of pizza - from wheat to extra virgin olive oil, and to tomato - the meal in the pizzeria remains well below the average increase in general prices, thus favoring consumption in about 60 thousand pizzerias between restaurants and takeaway pizzerias active along the Peninsula. The popular Italian food generates a turnover that has exceeded 15 billion euros with an estimated employment of over 100,000 full-time employees, which become 200,000 at the weekend. Every day in Italy alone, about 8 million pizzas are baked thanks to the annual use of 200 million kilos of flour, 225 million kilos of mozzarella, 30 million kilos of olive oil and 260 million kilos of tomato sauce.
