With a turnover that rises to over 15 billion euros per year, pizza is confirmed as a treasure of Made in Italy, a symbol of success of the Mediterranean diet in the world. This is what Coldiretti research center says on the occasion of the International Pizza Day that is celebrated today. The pizza, in its round, square version, with or without "crust", in pieces, thin, thick, crunchy or soft, with mozzarella and tomato or with pumpkin flowers and anchovies, or with grilled vegetables, is confirmed one of the most versatile historical dishes of Italian cuisine, so much so that in 2017 UNESCO proclaimed the Art of Neapolitan pizza makers an intangible heritage of humanity. In addition, pizza represents the backbone of an economic system consisting of 121 thousand premises in Italy where it is prepared and served thanks to an estimated employment of 100,000 full-time employees and 100,000 on weekends. In Italy, 2.7 billion pizzas are prepared throughout a year, which in terms of ingredients means 200 million kilos of flour, 225 million kilos of mozzarella, 30 million kilos of olive oil and 260 million kilos of tomato sauce.
