Not merely a distillation of custom. Grappa evolves while retaining the characteristics that make it an all-Italian excellence due to the efforts and initiative of some producers. Among these is unquestionably Roberto Castagner, an authority in the world of Italian grappa. In fact, the Castagner Distillery in Visnà di Vazzola (Treviso) has been able to anticipate new trends by making strategic decisions consistent with market developments and focusing on so-called "high-end" consumers. "The manner in which grappa is consumed has changed," confirms the company's founder, Roberto Castagner. "Today's consumer is more sophisticated and open to new experiences." Castagner has introduced a number of innovations, particularly technological ones. In fact, beginning with the 2017 harvest, it has implemented an innovative technology that separates the seeds and pedicel from the grape skins. By removing the woody components before distillation, the "Buccia Pura" technology system produces a cleaner, more fragrant product with less of a tannic note than is possible with conventional methods.
