The Union of Tuscan Chefs joins in the defense of the Florentine steak, to ensure the provenance and quality of the meat and its preparation according to tradition. Together with the Accademia della Fiorentina, Tuscan chefs are calling for a European seal of quality certifying respect for one of the most celebrated Florentine and Italian culinary traditions. It is a recognition against imitations, aiming at identifying the dish as a "Traditional Specialty Guaranteed". "Protecting the gastronomic identity of the Florentine steak means protecting the heritage of its city," says Giovanni Brajon, president of the Academy. "In an increasingly globalized world, the risk is a flattening out, which leads to losing quality one bite at a time. We need European certification as a guarantee". The "Traditional Specialty Guaranteed" (TSG) is a trademark used in Europe to enhance a traditional production method that must have existed for at least 30 years: this means that Fiorentina TSG can be prepared in any country of the Union, as long as the production complies with the relevant specification and is certified by an accredited control body.
