Production is slightly down but exports are increasing for Prosciutto di San Daniele: 2.59 million thighs processed in 2023 compared to 2.67 million in 2022 and 2.63 million in 2021. Nevertheless, determining whether a correlation exists between the decline in consumption of high-end cured meats and this decline is challenging to ascertain: as households' purchasing power diminishes, their preferences tend to migrate towards products priced lower. An additional concern was the decline in turnover growth to 3% in 2022, compared to 14% the year prior, which was significantly below the average rate of inflation. Positive developments have emerged, however, regarding exports, which increased to 19% of annual sales with an estimated 3 million kilograms destined for markets outside of Italy. It was 55% to the EU. France ranks first in terms of volume, with the United States, Australia, Germany, and Belgium following suit. "The number of trays of pre-sliced Prosciutto di San Daniele – says the Consortium – exceeded 21.3 million certified packages, equal to 407 thousand hams (+1% compared to the previous year), for a total of over 2 million kilograms, confirming itself as a consolidated trend in line with new consumption methods”.
