Prosecco Doc could soon be available in a "light" version with an alcohol content of eight degrees, down from the typical eleven. The concept was developed in response to the increasing demand for wines with a low alcohol content, health recommendations, and the new regulations of the Highway Code. "The market is changing rapidly", Giancarlo Guidolin, head of the Prosecco Doc Consortium, explained to Corriere del Veneto. "The demand for lighter wines is a global phenomenon. However, it is difficult to reduce the alcohol concentration of Prosecco because alcohol is an essential component of its balance and pleasantness". Companies are already experimenting with different methods, but the challenge is to keep Prosecco's particular flavor without making it overly sweet. "The risk", Guidolin points out, "is to obtain a wine similar to a demi-sec, pleasant at the first sip but less balanced in the long run".
