Aimo Moroni, an uncontested maestro of Italian cuisine and the founder, along with his wife Nadia, of the famed Milanese restaurant ‘Il Luogo di Aimo e Nadia’, died in Milan at age 89. He was a key figure in the country's culinary history, transforming a suburban trattoria into a model of Italian culinary perfection. "His cuisine is like the Italian flag”, declared Massimo Bottura, summarizing in a few words the cultural and symbolic influence of a 60-year career. Moroni established a legacy of flavor, precision, and enthusiasm that is still being carried on by his daughter Stefania and chefs Negrini and Pisani. ‘Il Luogo di Aimo e Nadia’ is one of the best-known and most esteemed names in fine dining. Its first official acknowledgment occurred in 1980, when it received its first Michelin star. The second came ten years later. The restaurant's signature dishes, such as the 1965 Spaghetti al Cipollotto (Spaghetti with Onion) and the Zuppa Etrusca (Etruscan Soup), became associated with consistency, identity, and sophistication. Today, it is one of the few examples of gastronomic continuity that has successfully passed the torch to the next generation without losing authenticity.
