The UN also acknowledges the Alba white truffle as a symbol and ambassador of sustainability.  Alex Mejia, director of Unitar, has signed a three-year memorandum of understanding with the Alba Fair Authority, the first such agreement in Italy between the United Nations and a food and wine festival.  The pact seeks to improve biodiversity, food security, and cultural value.  The Alba White Truffle World Market's ribbon-cutting ceremony marked the commencement of the 95th International Truffle Fair, which will continue for nine weekends, featuring tastings, cooking demonstrations, and events that encompass cuisine, wine, culture, and entertainment until December 8.
