Carnaroli rice, perfect for risotto due to its exceptional capacity to absorb spices, is celebrating its 80th anniversary. The result of a cross between the Vialone and Lencino varieties, it was developed in 1945 in the province of Pavia in Lombardy, at a time when this variety—destined to alter the course of Italian cuisine—was selected. It will be celebrated by the region's agritourism enterprises through the "Carnaroli Rice Routes" initiative organized by Coldiretti, the preeminent association representing and supporting Italian agriculture, scheduled from November 28th to 30th. The objective is to familiarize consumers with and foster an appreciation for authentic Carnaroli rice, cultivated from certified seedlings. Specifically, approximately fifty agritourism businesses across Lombardy are participating in the weekend dedicated to Carnaroli, prepared to serve risottos in a variety of flavors.
