Agricultural waste is finding new life on the dinner plate. Francesca Trevisiol, a researcher at the University of Udine, has earned the prestigious "What For" national award from Federalimentare - Italy’s primary food industry federation - for her groundbreaking work on olive pit upcycling. Now in its tenth edition, the award recognizes doctoral research that combines high-level innovation with immediate industrial applications. Trevisiol’s thesis details advanced fractionating techniques that extract functional, high-value food ingredients from discarded olive stones. The project forms part of Valostones, an EU-funded circular economy initiative led by the University of Gabes in Tunisia alongside academic and corporate partners across France, Morocco, Turkey, and Malta.
