Within the series "Sotto una buona stella", the award-winning Chef Norbert Niederkofler - the St. Hubertus Restaurant at the Hotel Rosa Alpina in San Cassiano - will talk about food and sustainability in the catering industry with Canadian chefs Jason Bangerter, Alida Solomon, and Rob Gentile, during the conference "The Ethical Chefs" scheduled for Monday, November 20th at the Toronto Alliance Française. The conference was organised by the Italian Consulate General in Toronto, the Italian Institute of Culture and the ICE Agency, in collaboration with the George Brown College. The "Sotto le stelle" series, launched in March 2015 in conjunction with the Milan Expo, aims to promote high quality Italian gastronomy in Canada through the sensory and educational components, without forgetting the aspect of solidarity. Norbert Niederkofler's talk completes the journey that began in 2015 with Massimo Bottura, which has led to the "kitchens of Italy" from Licata to San Cassian to be appreciated in Canada. (Red).
