Adelaide – Special event organized by the Consulate of Italy in Adelaide during the Week of Italian Cuisine in the World, in collaboration with Slow Food South Australia and End Food Waste, to highlight the benefits of the Mediterranean diet, promote food sustainability, and combat waste.
The event brought together experts to discuss key aspects of sustainability and responsible food consumption. Tania Paola, leader of the Slow Food South Australia Committee, emphasized how the Mediterranean diet supports healthy cooking while respecting natural resources, underlining the importance of food practices that preserve ecological balance. Steven Lapidge, CEO of End Food Waste, offered a comprehensive perspective on the global issue of food waste and the pressing need for concrete policies to tackle it. Mandy Hall, representative of the national campaign The Great Unwaste, outlined the campaign’s goals and initiatives to foster a culture of mindful consumption and waste reduction.
The Italian Consulate expressed full support for the campaign, recognizing its profound social and environmental significance.
The event continued with a culinary demonstration by chefs Rosa Matto and Kane Pollard, who created Mediterranean-inspired dishes reinvented with sustainability in mind. Using "rescued" ingredients and local resources, the chefs crafted dishes that minimized food waste and showcased the full potential of every part of the ingredients. (9colonne)
