On November 19th at 18:30 at the Italian Institute of Culture in Lisbon is the official opening of the Third Week of Italian Cuisine in the World. On the same day will also be the conference "Where Italian cuisine among regional roots and global influences is headed" by journalist and writer Davide Paolini, also known as the "Gastronaut", registered trademark and coined in 1999 by Paolini from his broadcast on Radio 24 to define the one who made choices about food on his own, fleeing the culinary clichés. Paolini was a lecturer in Food and Wine Tourism at the University of Parma and in Marketing and Promotion of Territory at the University of Urbino. Since 1983 he has been behinnd the "I Like" section on Il Sole 24 Ore and is the author of numerous books dedicated to food and to gastronomic and territorial marketing ( Paolini's conference is preceded by a presentation of the territory of Umbria, in particular of the Valle Umbra and Valnerina areas, realized by ATI3UMBRIA. At the end of the evening there will be a tasting of typical products from the region, such as the DOC and DOCG wines Sagrantino di Montefalco and Trebbiano Spoletino, the lentils of Castelluccio di Norcia PGI, saffron of Cascia, black celery of Trevi, the ham of Norcia PGI . The dishes served during the tasting are prepared by chef Maria Zappelli Cardarelli and by the chefs Fabrizio Gentili and Luigi Catana, with the collaboration of chef Francesco Palo of the Il Matriciano restaurant in Lisbon.
